From a visionary estate founded in 1994 by Mate Vekić on the Adriatic coast of Istria — Croatia's first olive oil to score 100/100 in Flos Olei. Viola Tonda is extracted from the native Buža variety, named for the chromatic journey of the olive fruit from beige to pink to deep purple at veraison. Green and fresh fruitiness of medium intensity with hints of almond, apple, banana and a touch of flowers. The initial sweetness gives way to a harmonious bitter-spicy balance, never aggressive — enveloping and persistent. Elegant almond notes, medicinal herbs, pepper and thistle.
